Vegan & Gluten-Free Breakfast Cookies

If you love cookies as much as I do, but want to keep your sugars low, protein high, & taste buds satisfied, these are for YOU.


These vegan, protein packed peanut butter & banana cookies 🍪 are nice & crisp on the outside, with a soft and chewy center! They are packed with nuts, providing those healthy fats, flavor, crunch, and only take around 30 minutes to prepare! They serve as the perfect snack or grab-and-go breakfast, by itself, or alongside a cup o’ jo!


⏱ Prep Time: 5 mins | Total Time: 25 mins. | Servings: 14 cookies | Difficulty: Easy


INGREDIENTS

  • 1 cup GF quick oats

  • 1 cup mashed bananas (2-3 medium bananas)

  • 4 tbsp. PB Fit protein powder

  • 2 tbsp. pure organic maple syrup

  • dash of cinnamon

  • 1 tsp. pure vanilla extract

  • ½ tsp. baking soda

  • ½ tsp. baking powder

  • ÂĽ cup almonds

  • ÂĽ cup pistachios


METHOD

  1. Combine & mix ingredients in a large mixing bowl

  2. Form into little balls and place on a baking tray lined with parchment paper

  3. Bake at 160 degrees c. For 25 mins until golden brown

  4. Remove from oven. Cool, serve, & enjoy!


GARNISH/SUBSTITUTIONS

If you like em extra crunchy, buy some extra-crunchy organic peanut butter. Want some extra sweetness and crunch? Add in 1/4th cup vegan dark chocolate chips or top with pumpkin seeds!
