⏱ Prep Time: 10 mins | Total Time: 40 mins | Servings: 32 Bites | Difficulty: Easy
INGREDIENTS
1 1/3 cup unsweetened, dry-toasted, shredded coconut
2 cups rolled oats
1 cup ground flaxseeds
1 cup 100% raw almond butter (can also use peanut or any other nut butter you fancy)
2/3 cups pure, organic maple syrup
2 tbsp chia seeds
2 tsp pure vanilla extract
1/2 tsp ground cinnamon
1/2 cup finely chopped 65-70% dark chocolate
1/4 tsp pure sea salt
Filtered water to help bind/roll into balls (optional)
METHOD
In a large mixing bowl, add rolled oats, shredded coconut, ground flaxseeds, chia seeds, ground cinnamon, and sea salt. Stir well to combine
Add 1 cup of almond butter, 2/3 cups of maple syrup, and 2 tsp of vanilla extract to the bowl.
Mix everything together until a sticky, uniform dough forms. If the mixture feels too dry, add a little filtered water to help bind.
Gently fold in the dark chocolate until evenly distributed throughout the mixture.
Cover the bowl and place in the fridge for 30 min.
Once chilled, scoop out the dough, and roll between your palms into smooth balls. You should get roughly 30-32 bites.
Place the finished bites into a tupperware or lined tray and keep refrigerated for up to 5 days!
