Vegan & Gluten-Free Waffles

Homemade waffles are the perfect go-to on a Saturday morning (or anytime of day, really). Am I right? Light and fluffy on the inside, crispy on the outside. These gluten-free vegan waffles are absolutely delicious and healthy at the same time!


⏱ Prep Time: 10 mins | Total Time: 20 mins | Servings: 8 Waffles | Difficulty: Medium


INGREDIENTS

  • ½ tbsp. chia seeds + 3 tbsp. water

  • 3 cups oat flour

  • 4 tsp. baking powder

  • 2 tsp. cinnamon

  • 1 tsp. pink himilayan salt 

  • 1 1/2 cups. dairy-free milk  

  • 1 tbsp. apple cider vinegar

  • 4 tbsp. pure maple syrup

  • 2 tsp. pure vanilla extract

  • ¼ cup of raw organic almond butter


METHOD

  1. In a small bowl, add the chia seeds and water. Mix together and set aside to thicken (it should form a thick paste)

  2. In another bowl, add the oat flour, baking powder, cinnamon and salt. Whisk until combined. Set aside.

  3. Next, add in the milk and apple cider vinegar. Mix and then add incorporate the maple syrup and vanilla extract to this mixture.

  4. In a separate bowl, add in the almond butter with a small amount of the milk mixture. Incorporate until smooth and continuously add more as needed.

  5. Now, incorporate both your dry and wet ingredients into one bowl. Stir until evenly combined, making sure that the batter is nice and smooth (no clumps)!

  6. Rest for 5 minutes

  7. Distribute about ¼ cup of the mixture onto your waffle maker and cook until golden & crispy!

  8. Serve warm with your favorite toppings and enjoy!


ADDITIONS/SUBSTITUTIONS

  • Following a gluten free diet? Use certified gluten-free oats

  • Allergic to nuts or don’t fancy almond butter? Sub this out for tahini or coconut oil

  • Garnish with fresh fruit, dark chocolate, nut butters, berries, or maple syrup!
